Description

A delicious and comforting lasagna soup loaded with rich flavors and nutritious ingredients.

Ingredients

Scale
  • 0 lb lean ground beef (substitute with ground turkey for a lighter option)
  • 0 lb Italian ground sausage (turkey sausage is a great alternative)
  • 1 tsp olive oil (for sautéing)
  • 0 cup yellow onion, chopped (the aromatic foundation of your soup)
  • 3 cloves garlic, minced (fresh garlic intensifies the soup’s flavor profile)
  • 3 tbsp tomato paste (thickens the broth and enriches the taste)
  • 24 oz red pasta sauce or marinara (the heart of sauce flavors)
  • 0 tsp red pepper flakes (adjust to taste)
  • 0 tsp salt (taste and add more if needed)
  • 0 tsp black ground pepper (elevates the flavor)
  • 0 tsp garlic powder (for an extra kick of garlic)
  • 0 tsp crushed dried oregano (a classic Italian herb)
  • 0 tsp dried thyme (complements the meaty flavors)
  • 7 cups beef or chicken broth (choose a brand you love)
  • 910 pieces uncooked lasagna noodles, broken (transforms into tender pieces in the soup)
  • 3 cups fresh baby spinach (added at the end for nutrition)
  • 0 cup shredded parmesan (for a cheesy finish)
  • 1 cup fresh ricotta (for creamy richness)
  • 1 cup shredded mozzarella (melts beautifully)

Instructions

  1. Warm the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion and cook until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and sauté for 30 seconds until fragrant.
  4. Add the lean ground beef and Italian sausage to the pot, cooking until browned, about 5-7 minutes.
  5. Stir in the tomato paste, red pepper flakes, salt, black pepper, garlic powder, oregano, and thyme. Cook until well combined, about 2 minutes.
  6. Add the beef or chicken broth and broken lasagna noodles. Bring to a gentle boil.
  7. Reduce the heat and let it simmer for about 20 minutes or until the noodles are tender.
  8. Gently fold in the fresh baby spinach and let it wilt for a couple of minutes.
  9. Ladle the soup into bowls and top with fresh dollops of ricotta, a sprinkle of mozzarella, and parmesan.
