A delicious and creamy soup made with Italian sausage, tortellini, and fresh spinach.

- 1 lb Italian sausage (casings removed)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 2 cups fresh spinach (packed)
- 4 cups chicken broth (low-sodium recommended)
- 1 can (14 ounces) diced tomatoes (with juice)
- 1 cup heavy cream
- 9 oz refrigerated tortellini
- 1 tbsp Italian seasoning
- 1 tsp basil (dried)
- 1/2 tsp red pepper flakes (optional)

- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot over medium heat, brown the Italian sausage, breaking it apart as it cooks for about 5-7 minutes, until it’s caramelized and fragrant.
- Add the chopped onion and cook until softened and translucent, roughly 5 minutes, stirring occasionally.
- Toss in the minced garlic and let it sizzle for about 1 minute.
- Pour in the chicken broth, diced tomatoes with their juices, Italian seasoning, and basil. Bring it all to a gentle simmer.
- Lower the heat to medium-low, cover, and let the soup bubble for 10 minutes.
- Stir in the refrigerated tortellini, cooking according to package directions, typically 5 to 7 minutes, until they float tenderly in the broth.
- Fold in the fresh spinach, stirring until it wilts beautifully.
- Remove from heat and stir in the heavy cream and grated Parmesan cheese until creamy, but don’t let it boil.
- Taste and adjust with salt and black pepper.
- Ladle the soup into bowls while it’s hot and enjoy.

- This soup can be made ahead of time and reheated for easy meals during the week.
