Description

A delicious and creamy soup made with Italian sausage, tortellini, and fresh spinach.


Ingredients

  • 1 lb Italian sausage (casings removed)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups fresh spinach (packed)
  • 4 cups chicken broth (low-sodium recommended)
  • 1 can (14 ounces) diced tomatoes (with juice)
  • 1 cup heavy cream
  • 9 oz refrigerated tortellini
  • 1 tbsp Italian seasoning
  • 1 tsp basil (dried)
  • 1/2 tsp red pepper flakes (optional)

  • to taste black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot over medium heat, brown the Italian sausage, breaking it apart as it cooks for about 5-7 minutes, until it’s caramelized and fragrant.
  2. Add the chopped onion and cook until softened and translucent, roughly 5 minutes, stirring occasionally.
  3. Toss in the minced garlic and let it sizzle for about 1 minute.
  4. Pour in the chicken broth, diced tomatoes with their juices, Italian seasoning, and basil. Bring it all to a gentle simmer.
  5. Lower the heat to medium-low, cover, and let the soup bubble for 10 minutes.
  6. Stir in the refrigerated tortellini, cooking according to package directions, typically 5 to 7 minutes, until they float tenderly in the broth.
  7. Fold in the fresh spinach, stirring until it wilts beautifully.
  8. Remove from heat and stir in the heavy cream and grated Parmesan cheese until creamy, but don’t let it boil.
  9. Taste and adjust with salt and black pepper.
  10. Ladle the soup into bowls while it’s hot and enjoy.
