- 2 cloves fresh garlic, minced
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup bell peppers (mixed colors), sliced
- 1 medium onion, thinly sliced
- 1 tsp ground cumin
- 1 tsp paprika
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Marinate Chicken: Dice chicken into bite-sized pieces and season with salt, pepper, cumin, and paprika. Let marinate for at least 30 minutes.
- Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add minced garlic and sliced onion; sauté until translucent (about 3 minutes).
- Cook Chicken: Add marinated chicken to the skillet and cook until golden brown (6-8 minutes), stirring occasionally.
- Add Bell Peppers: Stir in sliced bell peppers and cook until they soften slightly (4-5 minutes).
- Assemble Tortillas: Lay a tortilla flat, fill it with the chicken-pepper mixture, sprinkle with cheese, and fold tightly.
- Cook Tortillas: In a clean skillet over medium heat, cook folded tortillas seam-side down until golden brown (3-4 minutes per side).
Notes
- For extra flavor, let the chicken marinate longer, up to 2 hours.
- Feel free to add more vegetables like zucchini or mushrooms.
