- 2 cups mashed potatoes, cooled
- 1 cup all-purpose flour, plus extra for dusting
- 1/2 teaspoon salt
- 2 tablespoons unsalted butter, melted
Instructions
- Start by placing your cooled mashed potatoes in a large bowl. I always make sure they are smooth, because lumps can make the dough tricky to handle. Add the flour and salt, then drizzle in the melted butter. Mix gently with your hands until a soft dough forms. It should feel tender but not sticky.
- Turn the dough onto a lightly floured surface and pat it into a round, about half an inch thick. Using a knife, cut the round into four equal wedges, just like slicing a pie. These wedges are the classic “farls” shape that gives the dish its name.
- Heat a heavy skillet or griddle over medium heat. Place the farls onto the dry pan and cook for about 4 to 5 minutes on each side. You are looking for a golden crust with a soft, steamy center. Flip gently and let the second side cook until equally golden.
- Serve your Irish potato farls warm, ideally with butter melting into every nook. They are perfect alongside eggs, or simply enjoyed on their own with a cup of tea.
