Description

This baked feta pasta is a delicious blend of roasted vegetables, creamy feta, and fresh spinach, perfect for a weeknight dinner.


Ingredients

Scale
  • 200g Pasta (penne or fusilli)
  • 200g Feta Cheese
  • 2 cups Cherry Tomatoes
  • 1 cup Spinach
  • 1 Bell Pepper (diced)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • to taste Salt and Pepper
  • Fresh Basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place cherry tomatoes, diced bell pepper, and minced garlic in a baking dish.
  3. Toss with olive oil and season with salt and pepper.
  4. Place the block of feta cheese in the center of the vegetable mix.
  5. Bake for about 30 minutes until tomatoes are blistered and feta is creamy.
  6. Meanwhile, cook the pasta according to package instructions until al dente.
  7. Drain the pasta and add it to the baking dish with the roasted vegetables and feta.
  8. Stir in the fresh spinach and mix well until combined.
  9. Garnish with fresh basil and serve hot.

Notes

  • Feel free to add any other vegetables you like.
  • This dish can be served warm or at room temperature.
