A quick and easy chicken fried rice recipe packed with flavor and veggies.
Ingredients

- 2 cups cooked rice
- 1 pound ground chicken
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- Heat sesame oil in a large skillet over medium heat. Add the ground chicken and cook until browned.
- Add mixed vegetables on the other side of the skillet until heated through.
- Crack the eggs in the empty part of the skillet.
- Scramble the eggs with the chicken and vegetables.
- Add in the cooked rice and soy sauce, stirring well. Cook for another 3-5 minutes, seasoning with salt and pepper.
- Garnish with chopped green onions before serving.
Notes
- For extra flavor, you can add garlic or ginger.
- You can substitute the ground chicken with shrimp or tofu for a different protein option.
