Description

A quick and easy chicken fried rice recipe packed with flavor and veggies.


Ingredients

Scale
  • 2 cups cooked rice
  • 1 pound ground chicken
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat sesame oil in a large skillet over medium heat. Add the ground chicken and cook until browned.
  2. Add mixed vegetables on the other side of the skillet until heated through.
  3. Crack the eggs in the empty part of the skillet.
  4. Scramble the eggs with the chicken and vegetables.
  5. Add in the cooked rice and soy sauce, stirring well. Cook for another 3-5 minutes, seasoning with salt and pepper.
  6. Garnish with chopped green onions before serving.

Notes

  • For extra flavor, you can add garlic or ginger.
  • You can substitute the ground chicken with shrimp or tofu for a different protein option.
