- 1 packet taco seasoning
- 1 cup cooked white rice
- 1/2 cup corn
- 1/2 cup black beans
- 1/4 cup salsa
- 1/4 cup shredded cheddar cheese
- 1/4 cup chopped lettuce
- 2 tablespoons sour cream
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Drain off any excess grease.
- Stir in taco seasoning according to package directions.
- In a bowl, combine cooked rice, seasoned ground beef, corn, and black beans.
- Top with salsa, cheddar cheese, lettuce, and sour cream.
- Serve immediately.
