Ingredients

  • 15 Graham crackers for 3 layers
  • 8 ounces cream cheese (softened)
  • 8 ounces Cool Whip (thawed 1 container)
  • ¾ cup confectioners’ sugar
  • 2 3 oz boxes instant cheesecake pudding (or instant vanilla pudding)
  • 2 cups cold milk
  • 8 ounces Cool Whip (thawed 1 container)
  • 21 ounces cherry pie filling

Instructions

  1. Cream Cheese Filling: Whip softened cream cheese until fluffy. Mix in confectioners’ sugar, then fold in Cool Whip until smooth (don’t overmix).
  2. Pudding Filling (Alternative): Mix 2 small packs of instant cheesecake or vanilla pudding with 2 cups cold milk. Fold in Cool Whip.
  3. Assemble Layers: Layer graham crackers in an 8×8 pan. Spread half of the filling over the crackers. Add another layer of graham crackers, spread the remaining filling, then top with more graham crackers.
  4. Cherry Layer: Spoon cherry pie filling over the top layer of graham crackers.
  5. Chill: Refrigerate for at least 4 hours or overnight.
