Sugar Cookies with Pink Frosting

Description

Delicious sugar cookies topped with pink frosting, perfect for any occasion!


Ingredients

Scale
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup unsalted butter (straight from fridge, cut into large cubes)
  • 1 cup granulated sugar
  • 2 eggs (straight from the fridge)
  • 2 teaspoons vanilla extract
  • ½ teaspoon almond extract (optional)
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar
  • ¼ teaspoon salt
  • ¼ teaspoon almond extract
  • 2 teaspoons vanilla extract
  • 34 tablespoons heavy cream (or milk of choice)
  • 34 drops pink food coloring

Instructions

  1. Preheat oven to 350°F and line 2 baking sheets with parchment paper or silpat liners.
  2. Using a mixer, cream together the cold butter cubes and sugar for 3-4 minutes until light and fluffy.
  3. Add eggs, one at a time, beating about 1 minute between additions.
  4. Add vanilla extract and almond extract, mix until combined.
  5. Mix in the baking powder, salt and ½ of the all-purpose flour, then with mixer on low until combined.
  6. Add the remainder of flour and mix together until you get a soft cookie dough that is soft and scoopable.
  7. Using a ¼ cup cookie scoop, heap the cookie dough into the scoop and drop on cookie sheet for ¼ or ⅓ cup cookie size. Lightly pat down the cookies.
  8. Bake in preheated 350°F oven for 9-12 minutes and remove once cookies are no longer wet on top, but puffy looking.
  9. Allow the cookies to cool on your cookie sheets for 10 minutes before transferring them to a wire rack.
  10. Once cooled, frost!
  11. Using a mixer, beat butter until light and fluffy. Add powdered sugar, vanilla, almond extract, salt and cream/milk and beat slowly on low, increasing speed for 2-3 minutes as frosting comes together.
  12. Add 2-4 drops of pink food coloring and continue beating until well distributed.
  13. Spread frosting onto cooled cookies using a piping bag or offset spatula. Add sprinkles if desired.

Notes

  • Ensure cookies are thoroughly cooled before frosting.
  • For thicker cookies, do not pat them down too much before baking.
