Description

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 6 cups low-sodium chicken broth
  • 1 cup uncooked long-grain rice
  • 2 medium carrots, diced
  • 2 celery stalks, chopped
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • Salt to taste
  • 1 tbsp olive oil
  • 1/2 lemon, juiced
  • 1 cup frozen peas (optional)

Instructions

  1. In a large slow cooker, add the chicken breasts, broth, rice, carrots, celery, onion, garlic, thyme, parsley, and black pepper.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  3. Remove the chicken, shred it with two forks, and return it to the slow cooker.
  4. Stir in the lemon juice and frozen peas (if using). Cook for an additional 10-15 minutes.
  5. Taste and adjust salt as needed before serving.
