Description

A delicious and healthy ground turkey and sweet potato bake topped with cheddar cheese.


Ingredients

  • 1 lb lean ground turkey
  • 2 medium sweet potatoes (about 2 cups diced)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, add olive oil, then sauté chopped onions and minced garlic until fragrant (about 3 minutes).
  3. Add ground turkey to the skillet, season with salt and pepper, and cook until browned (approximately 5 minutes).
  4. Stir in diced sweet potatoes and fresh spinach; cook for another 5 minutes until sweet potatoes are slightly tender.
  5. Transfer the mixture to the baking dish, top with shredded cheddar cheese, and bake for 25-30 minutes until bubbly and golden brown.
  6. Allow to cool slightly before serving.
