Description
A delicious and healthy ground turkey and sweet potato bake topped with cheddar cheese.

- 1 lb lean ground turkey
- 2 medium sweet potatoes (about 2 cups diced)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- In a large skillet over medium heat, add olive oil, then sauté chopped onions and minced garlic until fragrant (about 3 minutes).
- Add ground turkey to the skillet, season with salt and pepper, and cook until browned (approximately 5 minutes).
- Stir in diced sweet potatoes and fresh spinach; cook for another 5 minutes until sweet potatoes are slightly tender.
- Transfer the mixture to the baking dish, top with shredded cheddar cheese, and bake for 25-30 minutes until bubbly and golden brown.
- Allow to cool slightly before serving.
Notes
- This dish can be served with a green salad for a complete meal.
- You can substitute ground turkey with chicken or beef if preferred.
