- 1 cup fresh pitted cherries, chopped
- 1 cup unsweetened shredded coconut
- 1 cup all-purpose flour
- 1 tsp baking powder
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs (room temperature)
- 1 tsp pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, mix melted butter with sugar until creamy. Add eggs one at a time and stir in vanilla.
- In another bowl, combine flour, baking powder, and shredded coconut. Gradually fold this mixture into the wet ingredients until just combined.
- Gently fold in chopped cherries, then pour the batter into the prepared dish.
- Bake for 25-30 minutes or until golden brown. Allow to cool before cutting into squares.
