Description

Ingredients

  • 2 medium leeks, cleaned and sliced into half-moons
  • 1 cup fresh peas (or frozen)
  • 2 tablespoons unsalted butter
  • 2 cups butter lettuce or Romaine, roughly chopped
  • 1 cup vegetable broth

Instructions

  1. Clean the leeks thoroughly and slice them into half-moons.
  2. In a large skillet over medium heat, melt the butter. Add leeks and sauté until tender and golden brown, about 5 minutes.
  3. Pour in vegetable broth and add peas. Season with salt and pepper; simmer for 5 minutes until peas are bright green.
  4. Add chopped lettuce to the skillet; stir gently until wilted (about 2 minutes).
  5. Taste and adjust seasoning as needed. Serve warm.
