A delicious and simple sautéed vegetable dish featuring leeks, peas, and lettuce.

- 2 medium leeks, cleaned and sliced into half-moons
- 1 cup fresh peas (or frozen)
- 2 tablespoons unsalted butter
- 2 cups butter lettuce or Romaine, roughly chopped
- 1 cup vegetable broth
- to taste Salt and pepper
Instructions
- Clean the leeks thoroughly and slice them into half-moons.
- In a large skillet over medium heat, melt the butter. Add leeks and sauté until tender and golden brown, about 5 minutes.
- Pour in vegetable broth and add peas. Season with salt and pepper; simmer for 5 minutes until peas are bright green.
- Add chopped lettuce to the skillet; stir gently until wilted (about 2 minutes).
- Taste and adjust seasoning as needed. Serve warm.
