Description

A delicious and hearty cheesy beef and cornbread skillet pie that is perfect for dinner any night of the week!


Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 2 cloves garlic (minced)
  • 1 (15 ounce can) canned black beans (drained and rinsed)
  • 1 (15 ounce can) canned corn
  • 1 (14 ounce can) canned diced tomatoes (drained)
  • 4 ounces diced green chilies
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon cumin
  • ¼ teaspoon black pepper
  • 1 ⅓ cups shredded cheddar cheese (divided)
  • ¼ cup butter (melted)
  • ⅓ cup granulated sugar
  • 1 egg
  • ½ cup buttermilk
  • ½ cup all-purpose flour
  • ½ cup corn meal
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 2 tablespoons chopped fresh cilantro
  • Sour cream for topping

Instructions

  1. Place ground beef, onion, and garlic in a 10 inch oven proof skillet and cook over medium-high heat until meat is browned and onions are translucent. Drain off oil.
  2. Mix in the black beans, corn, green chilies, tomatoes, tomato paste, and seasonings. Bring to a simmer and cook for 10 minutes while you make the cornbread batter.
  3. Preheat oven to 375°F.
  4. For the cornbread batter, mix the butter and sugar together. Add the egg and buttermilk and mix until smooth. Add remaining cornbread ingredients and stir until combined.
  5. Stir 1 cup cheese into the meat mixture after it simmers. Pack the mixture down into the pan to make a smooth even surface. Spread the cornbread batter evenly over the top. Sprinkle with remaining ⅓ cup cheese and bake for 25-30 minutes or until golden.
  6. Let the pie rest for 5-10 minutes before slicing and serving. Top with cilantro and sour cream.
