Description

Delicious and cheesy waffles with a kick of jalapeño.


Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 cup sharp cheddar cheese, shredded
  • 2 jalapeños, finely chopped
  • 2 tablespoons fresh parsley or chives, chopped (optional)

Instructions

  1. Preheat your waffle iron to medium-high heat.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk the eggs, then add buttermilk and melted butter. Mix until smooth.
  4. Pour the wet ingredients into the dry and stir until just combined. Don’t overmix.
  5. Fold in shredded cheddar cheese, chopped jalapeños, and optional herbs.
  6. Grease the waffle iron with nonstick spray or oil. Add 1/2 to 2/3 cup batter per waffle.
  7. Cook for 4–6 minutes, or until golden and crispy.
  8. Keep cooked waffles warm in a 200°F (93°C) oven while finishing the rest.
  9. Serve hot with toppings of your choice like fried chicken, chili, or sour cream.
  10. Store leftovers in the fridge or freezer; reheat in a toaster oven for best results.
