Delicious and cheesy waffles with a kick of jalapeño.

- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 cup sharp cheddar cheese, shredded
- 2 jalapeños, finely chopped
- 2 tablespoons fresh parsley or chives, chopped (optional)
Instructions
- Preheat your waffle iron to medium-high heat.
- In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk the eggs, then add buttermilk and melted butter. Mix until smooth.
- Pour the wet ingredients into the dry and stir until just combined. Don’t overmix.
- Fold in shredded cheddar cheese, chopped jalapeños, and optional herbs.
- Grease the waffle iron with nonstick spray or oil. Add 1/2 to 2/3 cup batter per waffle.
- Cook for 4–6 minutes, or until golden and crispy.
- Keep cooked waffles warm in a 200°F (93°C) oven while finishing the rest.
- Serve hot with toppings of your choice like fried chicken, chili, or sour cream.
- Store leftovers in the fridge or freezer; reheat in a toaster oven for best results.

- Feel free to adjust the spice level by modifying the amount of jalapeños.
