Description
A delicious and healthy beet hummus served with fresh veggies and pita chips.
Ingredients
Scale
- 2 medium-sized beets (about 300g)
- 1 cup tahini (240g)
- 2 garlic cloves, minced
- Juice of 1 lemon (about 3 tbsp or 45ml)
- 2 tbsp extra virgin olive oil (30ml), plus more for drizzling
- Salt and pepper to taste
- Assorted fresh veggies (carrots, cucumbers) and pita chips for serving
Instructions
- Preheat oven to 400°F (200°C).
- Wrap each beet in aluminum foil and roast on a baking sheet for about 1 hour or until fork-tender.
- Allow the beets to cool slightly, then peel off the skins.
- In a food processor, combine peeled beets, tahini, garlic, lemon juice, salt, pepper, and drizzle in olive oil.
- Blend until smooth; add water as needed to reach desired consistency.
- Taste and adjust seasoning if necessary.
- Transfer the hummus to a serving platter, drizzle with olive oil, sprinkle with sea salt or paprika if desired.
- Surround with assorted veggies and pita chips for dipping.
Notes
- Great served warm or cold.
- Store leftovers in an airtight container in the refrigerator for up to a week.
