Description

A delicious and healthy beet hummus served with fresh veggies and pita chips.


Ingredients

Scale
  • 2 medium-sized beets (about 300g)
  • 1 cup tahini (240g)
  • 2 garlic cloves, minced
  • Juice of 1 lemon (about 3 tbsp or 45ml)
  • 2 tbsp extra virgin olive oil (30ml), plus more for drizzling
  • Salt and pepper to taste
  • Assorted fresh veggies (carrots, cucumbers) and pita chips for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wrap each beet in aluminum foil and roast on a baking sheet for about 1 hour or until fork-tender.
  3. Allow the beets to cool slightly, then peel off the skins.
  4. In a food processor, combine peeled beets, tahini, garlic, lemon juice, salt, pepper, and drizzle in olive oil.
  5. Blend until smooth; add water as needed to reach desired consistency.
  6. Taste and adjust seasoning if necessary.
  7. Transfer the hummus to a serving platter, drizzle with olive oil, sprinkle with sea salt or paprika if desired.
  8. Surround with assorted veggies and pita chips for dipping.

  • Store leftovers in an airtight container in the refrigerator for up to a week.
