- 1 cup glutinous rice flour
- 2 tablespoons matcha powder
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ½ cup white chocolate chips
- 1 large egg (room temperature)
- ¼ cup unsalted butter (melted)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine glutinous rice flour, matcha powder, sugar, and baking powder until well blended.
- Add melted butter and the egg; stir until you achieve a thick, slightly sticky dough.
- Gently fold in the white chocolate chips.
- Scoop the dough onto a lined baking sheet, spacing them out evenly.
- Bake for 12-15 minutes until edges are lightly golden but centers remain soft.
- Cool on a wire rack before serving.
Notes
- For best results, make sure the egg is at room temperature.
- Allow cookies to cool slightly on the baking sheet before transferring to a wire rack.
