This Jamaican Curry Chicken is a flavorful dish that’s sure to please!


Ingredients

  • 1 lbs boneless chicken thighs
  • 2 tbsp Jamaican curry powder
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 bell pepper (any color), sliced
  • 1 can (13 oz) full-fat coconut milk
  • 1 cup low-sodium chicken broth

Instructions

  1. Prepare your ingredients by slicing the onion and bell pepper, and mincing the garlic and ginger.
  2. In a large bowl, combine chicken thighs with curry powder, garlic, ginger, salt, and pepper. Marinate for at least 30 minutes.
  3. Heat oil in a large pot over medium heat. Sauté onions and bell peppers until soft (about 5 minutes).
  4. Add marinated chicken to the pot; cook until browned on all sides (approximately 8 minutes).
  5. Pour in coconut milk and chicken broth; stir well and bring to a gentle simmer.
  6. Cover and let simmer on low heat for about 20 minutes until the chicken is cooked through.

Notes

  • This dish pairs well with rice or naan.
  • For additional heat, add some chopped Scotch bonnet pepper.
