This Jamaican Curry Chicken is a flavorful dish that’s sure to please!

- 1 lbs boneless chicken thighs
- 2 tbsp Jamaican curry powder
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 bell pepper (any color), sliced
- 1 can (13 oz) full-fat coconut milk
- 1 cup low-sodium chicken broth
Instructions
- Prepare your ingredients by slicing the onion and bell pepper, and mincing the garlic and ginger.
- In a large bowl, combine chicken thighs with curry powder, garlic, ginger, salt, and pepper. Marinate for at least 30 minutes.
- Heat oil in a large pot over medium heat. Sauté onions and bell peppers until soft (about 5 minutes).
- Add marinated chicken to the pot; cook until browned on all sides (approximately 8 minutes).
- Pour in coconut milk and chicken broth; stir well and bring to a gentle simmer.
- Cover and let simmer on low heat for about 20 minutes until the chicken is cooked through.
Notes
- This dish pairs well with rice or naan.
- For additional heat, add some chopped Scotch bonnet pepper.
