Description

Deliciously crispy sweet potato fries served with a flavorful dipping sauce.


Ingredients

Scale
  • 4 medium sweet potatoes
  • 1 cup cornstarch
  • 1/8 cup avocado oil
  • 2 teaspoons cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/2 cup cilantro (chopped)
  • 2 tablespoons olive oil
  • 1 clove garlic (minced)
  • 2 chipotle peppers in adobo sauce (from the can)
  • 2 tablespoons lime juice

Instructions

  1. Preheat oven to 425 degrees F.
  2. Peel and cut each sweet potato in half lengthwise. Cut each half into 1/3″ slices, then cut those slices into 1/3″ pieces. As you cut them, add the sliced sweet potatoes to a bowl of ice water to keep them from oxidizing.
  3. Remove sweet potatoes from the water and lay them out flat on a towel. Pat them dry with a towel on top as well.
  4. Place sliced potatoes in a large bowl and toss with the cornstarch, then transfer to a baking sheet in a single layer (you may need more than one baking sheet – be sure not to overcrowd them). Drizzle with avocado oil, then sprinkle with cumin, salt, and pepper to season.
  5. Bake in a preheated oven for about 25 minutes, or until the edges are slightly crispy and golden brown.
  6. Remove from the oven and allow to cool slightly while you make the Sweet Potato Fries dipping sauce. Enjoy!
  7. In a blender, combine the mayonnaise, cilantro, garlic, chipotle peppers, and the juice of one lime. Pulse on medium until well blended.

  • The sweet potatoes should be dry before baking to ensure crispiness.
