Description
Deliciously crispy sweet potato fries served with a flavorful dipping sauce.
Ingredients

- 4 medium sweet potatoes
- 1 cup cornstarch
- 1/8 cup avocado oil
- 2 teaspoons cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup mayonnaise
- 1/2 cup cilantro (chopped)
- 2 tablespoons olive oil
- 1 clove garlic (minced)
- 2 chipotle peppers in adobo sauce (from the can)
- 2 tablespoons lime juice
Instructions
- Preheat oven to 425 degrees F.
- Peel and cut each sweet potato in half lengthwise. Cut each half into 1/3″ slices, then cut those slices into 1/3″ pieces. As you cut them, add the sliced sweet potatoes to a bowl of ice water to keep them from oxidizing.
- Remove sweet potatoes from the water and lay them out flat on a towel. Pat them dry with a towel on top as well.
- Place sliced potatoes in a large bowl and toss with the cornstarch, then transfer to a baking sheet in a single layer (you may need more than one baking sheet – be sure not to overcrowd them). Drizzle with avocado oil, then sprinkle with cumin, salt, and pepper to season.
- Bake in a preheated oven for about 25 minutes, or until the edges are slightly crispy and golden brown.
- Remove from the oven and allow to cool slightly while you make the Sweet Potato Fries dipping sauce. Enjoy!
- In a blender, combine the mayonnaise, cilantro, garlic, chipotle peppers, and the juice of one lime. Pulse on medium until well blended.
Notes
- The sweet potatoes should be dry before baking to ensure crispiness.
