Description

These sweet glazed carrots are a simple yet delicious side dish, perfect for any meal!


Ingredients

Scale
  • 2 pounds carrots (cut into 1/2″ slices)
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 3 tablespoons light brown sugar
  • 3 tablespoons honey
  • 1/4 teaspoon salt
  • 1/4 cup parsley (chopped for garnish)

Instructions

  1. In a medium saucepan, add enough water to cover all of the sliced carrots by 2-3″ and bring to a boil.
  2. Add the carrots, return to a simmer, and cook for about 8-10 minutes, or until fork tender. Drain the water and return the carrots to the pan.
  3. Add the olive oil, butter, brown sugar, honey, and salt to the pot with the carrots and toss to coat. Heat over medium for another 3-5 minutes, stirring occasionally, until the sauce has thickened.
  4. Remove from heat, sprinkle chopped parsley over the top for garnish, and serve immediately. Enjoy!
