Description

A deliciously creamy pasta dish featuring salmon and spinach, perfect for a quick dinner!


Ingredients

  • 12 ounces pasta (penne, farfalle, or your choice)
  • 2 tbsp olive oil
  • 1 pound salmon fillets, skin removed
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tsp lemon zest
  • 1 tbsp lemon juice

Instructions

  1. Cook the pasta according to package directions. Drain and set aside.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper and place them in the hot skillet. Cook for 4-5 minutes per side, until the salmon is cooked through and flakes easily. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Pour in the heavy cream and chicken broth, and bring to a simmer.
  4. Stir in the Parmesan cheese until melted and the sauce is smooth. Add the fresh spinach and cook until wilted, about 2 minutes.
  5. Flake the cooked salmon into bite-sized pieces and return it to the skillet. Gently fold in the cooked pasta, lemon zest, and lemon juice. Mix until everything is well combined and heated through.
  6. Serve immediately, garnished with additional Parmesan cheese if desired.

Notes

  • For a lighter version, you can substitute half-and-half for heavy cream.
  • Feel free to add other vegetables like peas or cherry tomatoes for extra flavor.
