- 12 ounces pasta (penne, farfalle, or your choice)
- 2 tbsp olive oil
- 1 pound salmon fillets, skin removed
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- 1 tsp lemon zest
- 1 tbsp lemon juice
Instructions
- Cook the pasta according to package directions. Drain and set aside.
- While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper and place them in the hot skillet. Cook for 4-5 minutes per side, until the salmon is cooked through and flakes easily. Remove the salmon from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Pour in the heavy cream and chicken broth, and bring to a simmer.
- Stir in the Parmesan cheese until melted and the sauce is smooth. Add the fresh spinach and cook until wilted, about 2 minutes.
- Flake the cooked salmon into bite-sized pieces and return it to the skillet. Gently fold in the cooked pasta, lemon zest, and lemon juice. Mix until everything is well combined and heated through.
- Serve immediately, garnished with additional Parmesan cheese if desired.
Notes
- For a lighter version, you can substitute half-and-half for heavy cream.
- Feel free to add other vegetables like peas or cherry tomatoes for extra flavor.
