- 1 lbs boneless, skinless chicken breasts
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (15 ounce) can diced tomatoes, undrained
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces cream cheese, softened
- 1/2 cup heavy cream
- 1 cup grated Parmesan cheese, plus more for garnish
- Fresh parsley, chopped, for garnish
Instructions
- Place chicken breasts, chopped onion, minced garlic, chicken broth, diced tomatoes, dried basil, dried oregano, salt, and pepper in a crock pot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and shreds easily.
- Remove chicken from the crock pot and shred with two forks. Return the shredded chicken to the crock pot.
- Add softened cream cheese and heavy cream to the crock pot. Stir until the cream cheese is melted and the soup is creamy.
- Stir in Parmesan cheese until melted and combined.
- Serve hot, garnished with extra Parmesan cheese and fresh parsley.
