A delicious twist on traditional French toast using pumpkin puree and warm spices.

Ingredients

Scale
  • 4 large eggs
  • 1 cup whole milk (or almond/oat milk)
  • 1 cup pumpkin puree (canned or fresh)
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp vanilla extract
  • 8 slices brioche or challah bread
  • 2 tbsp butter (for cooking)
  • Maple syrup (for serving)

Instructions

  1. In a mixing bowl, whisk together eggs, milk, pumpkin puree, cinnamon, nutmeg, and vanilla until smooth.
  2. Preheat a skillet over medium heat and melt butter until bubbly.
  3. Dip each slice of bread into the custard mixture briefly, allowing it to absorb without becoming soggy.
  4. Cook soaked bread slices on the skillet for about 3-4 minutes per side until golden brown.
