A delicious cheesy mashed potato bake that is perfect for any occasion.
Ingredients

- 2 lbs russet potatoes, peeled and chopped
- 4 tbsp unsalted butter
- 1/2 cup heavy cream (or milk)
- 1 medium onion, finely chopped
- 1 cup sharp cheddar cheese, shredded
- 2 tsp paprika (smoked if preferred)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- Boil the chopped potatoes in salted water until fork-tender (about 15-20 minutes). Drain and return to the pot.
- Mash the potatoes with butter, heavy cream, salt, pepper, and paprika until smooth.
- Sauté onions in a skillet over medium heat until soft, about 5 minutes.
- Layer half of the mashed potatoes in the baking dish, top with sautéed onions and half the cheese. Add remaining mashed potatoes and sprinkle with remaining cheese.
- Bake for 25-30 minutes until bubbly and golden.
Notes
- For a smoky flavor, use smoked paprika.
- This dish can be made ahead of time and frozen before baking.
