Delicious and fluffy waffles made with almond flour and tapioca starch.
Ingredients

- 3 large eggs
- 3 Tbsp coconut oil, melted
- 2 Tbsp maple syrup
- 2 Tbsp water
- 1 tsp vanilla extract
- 1 cup blanched almond flour (90g)
- 1/2 cup tapioca starch (65g)
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Place a wire cooling rack in your oven and preheat your oven to 300 degrees F.
- Plug in your waffle iron to preheat.
- In a large mixing bowl, combine the wet waffle ingredients: eggs, melted coconut oil, maple syrup, water, and vanilla.
- Mix in the dry ingredients: almond flour, tapioca starch, baking soda, and salt.
- Let the batter rest for 5 minutes.
- Scoop the batter onto your preheated waffle iron and cook until slightly browned.
- Remove the waffle and place it in your oven, on the wire cooling rack.
- Repeat until no more batter remains.
Notes
- Make sure the waffle iron is preheated for the best results.
- You can add toppings like berries, maple syrup, or whipped cream.
