Description

Delicious and fluffy waffles made with almond flour and tapioca starch.


Ingredients

Scale
  • 3 large eggs
  • 3 Tbsp coconut oil, melted
  • 2 Tbsp maple syrup
  • 2 Tbsp water
  • 1 tsp vanilla extract
  • 1 cup blanched almond flour (90g)
  • 1/2 cup tapioca starch (65g)
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Place a wire cooling rack in your oven and preheat your oven to 300 degrees F.
  2. Plug in your waffle iron to preheat.
  3. In a large mixing bowl, combine the wet waffle ingredients: eggs, melted coconut oil, maple syrup, water, and vanilla.
  4. Mix in the dry ingredients: almond flour, tapioca starch, baking soda, and salt.
  5. Let the batter rest for 5 minutes.
  6. Scoop the batter onto your preheated waffle iron and cook until slightly browned.
  7. Remove the waffle and place it in your oven, on the wire cooling rack.
  8. Repeat until no more batter remains.

Notes

  • Make sure the waffle iron is preheated for the best results.
  • You can add toppings like berries, maple syrup, or whipped cream.
