A delicious and easy recipe for peanut butter noodles, packed with veggies and flavor.
Ingredients

- 8 oz egg noodles
- 1/4 cup creamy peanut butter
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp lime juice
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup snap peas
- 3 cloves garlic, minced
Instructions
- Cook the egg noodles according to package instructions until al dente. Drain and set aside.
- In the same pot, heat sesame oil over medium heat. Sauté minced garlic until fragrant.
- Add bell peppers, carrots, and snap peas; stir-fry until tender-crisp.
- In a bowl, whisk together peanut butter, soy sauce, lime juice, and a splash of warm water until smooth.
- Return cooked noodles to the pot and pour in the peanut sauce. Toss everything together until well combined.
- Heat through for another couple of minutes before serving.
Notes
- This dish can be served warm or cold.
- Feel free to add your favorite proteins or more vegetables.
